Chewy Chocolate Chip Cookies

Quick and easy! The definitive soft, chewy chocolate chip cookie recipe. After getting the hang of these, you’ll never eat store-bought cookies again.

Yields 12 servings


  • 1 cup butter (2 sticks)
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tbs vanilla extract
  • 3/4 cup all-purpose flour
  • 1 – 1/4 cups bread flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped walnuts


In a large bowl, combine the butter, brown sugar, and white sugar. Using an electric mixer, cream the mixture until it is light and fluffy (about 2 minutes). Add the vanilla and eggs, and mix until incorporated.

In a separate bowl, sift together the flours, salt, and baking soda. Add the dry ingredients to the creamed butter and mix on low speed or by hand. Fold in the chocolate chips and walnuts by hand.

img_2836For best results, refrigerate the dough for a few hours before baking. When you’re ready to bake, preheat the oven to 350 degrees F. Using your hands or an ice cream scoop, portion out 12 equal balls of dough. Bake for 17 minutes and remove from the oven.

Allow the cookies to cool completely before eating.
